what is Matcha?
Matcha, also known as the end of the tea, originated in the Wei and Jin Dynasties in China. Its practice is to collect the tender tea in the spring, then use steam to kill the green tea, and make it into cake tea (Group tea) for preservation. When eating, first put the cake tea on the fire to bake and dry, then grind it into powder with a natural stone mill, then pour it into the tea bowl and flush it with boiling water, stir the tea in the bowl with tea to make it foam, and then drink.
Matcha raw material is a kind of small tea without rolling, its production has two keywords: cover and steamed green. The shed must be set up 20 days before the spring tea picking, covering reed curtain and straw curtain, the shading rate can reach more than 98%, and there is also simple covering, the shading rate can only reach 70-85% when covered with black plastic gauze. Experiments show that the effect of shading tea with different materials and colors is different.
